Winemaking Alcoholic fermentation and 30-day maceration. Maturation in new, 225-litre French oak barrels for 24 months before bottling. Characteristics The goal is to enrich our traditional production of Merlot with new grape varieties that combine agronomic and winegrowing benefits with oenological quality. After a long ripening period on the vine (late harvesting at the end of October/early November), grapes are turned into wine. Winetasting Dark ruby colour, very complex on the nose with spicy notes (cloves and thyme). Tomato leaf, blackberry and currant aromas can be smelt, too. Long ageing in oak barrels enriches it with balsamic and toasty aromas (essential oils, caramel and coffee). On the palate, it boasts a mouth-filling and tannic, yet very well-balanced and elegant body. Best consumed within 5-7 years of bottling. Food pairing Given its structure, we advise you to pair this wine with rich dishes, such as horse tenderloin with roasted potatoes and courgettes, beef fillet with green peppercorn sauce and peppers, rack of lamb with fresh herbs, jacket potatoes and Swiss chard. |
