Winemaking

Fermentation with skin contact for about 16 days, spontaneous malolactic fermentation and barrel ageing for 20 months in french oak 225 liters barrique, 10% new oak.

Characteristics

The grapes used in this wine belong to our oldest vineyards (locally called “ronchi”),located at the foothills of our surrounding mountains in the village of Monte Carasso. The 30/40 years old vines have a very low yield with a very high quality profile in terms of color, aromatics and concentration. The Merlot we obtain shows a very unique character with a wide range of flavors, deep and persistent taste with soft/silky tannins and a long yet harmonic finish.

Tasting
The intense and elegant bouquet shoes various layers of flavors, such as plums, blackberry and red berries jam, with hints of licorice and toasted aromas. The mouthfeel is fresh and smooth, balanced with deep velvety tannins that give a very long yet pleasant aftertaste.

Food pairing
This powerful and elegant wine is the result of the perfect balance between the aromatic complexity and the opulence in the  mouth, and it pairs beautifully with braised and stewed meat such as wild game and veal. It is a perfect pairing with our local Swiss alpine aged cheese as well.
